Kitchen Sink Huevos Rancheros with Mexican Tzatziki

First of all, let me clarify what I mean by “kitchen sink.” Whenever I’m trying to use up everything in the fridge prior to a trip to the grocery store, I often throw it all into one dish. You know, “everything but the kitchen sink.” Sometimes, it ends up being a really basic salad or something of the like. Other times, however, I end up with a completely awesome dish like these huevos rancheros.

I made this Mexican tzatziki about a week ago and, prior to this post, there was only a teensy bit left. I’m so happy that these huevos rancheros happened because that means that I get to unexpectedly share the recipe for my Mexican tzatziki with you. As it turns out, Mexican tzatziki is deee-lish, so I don’t think you’ll be disappointed!

I must note that I make traditional tzatziki regularly. In fact, I’m surprised my recipe hasn’t made it onto my blog prior to this post. While there is absolutely, positively nothing wrong with traditional tzatziki, sometimes my creativity in the kitchen spirals out of control. As a result, strangely amazing things like Mexican tzatziki happen. Originally, I made it for taco night. I always use Greek yogurt in lieu of sour cream, so I thought it would be fun to add cilantro, lime, chipotle pepper, and several other ingredients into the mix.

The “recipe” for these huevos rancheros is more of a “non-recipe.” What I mean by that is that exact measurements are not necessary. Instead, throw the yummy ingredients on a plate and it will work; I assure you! What are some of your favorite non-recipes?

PART 1: MEXICAN TZATZIKI

Note: To make traditional tzatziki, sub dill for cilantro, 2 lemons for 4 limes, and black pepper for chipotle pepper.

What you’ll need:

  • 4 cups Greek yogurt
  • 1 cup fresh cilantro, chopped
  • 1 English cucumber, seeded and chopped fine
  • 6 garlic cloves, minced
  • The juice of 4 limes
  • Chipotle pepper to taste
  • Himalayan salt to taste

What you’ll do:

  • In a large mixing bowl, fold all ingredients together
  • Serve with huevos rancheros or tacos, or as a dip paired with tortilla chips

PART 2: KITCHEN SINK HUEVOS RANCHEROS

What you’ll need:

  • 1 whole wheat tortilla, toasted
  • A large handful of greens
  • 1/2 a can of black beans, drained
  • 1 avocado, sliced
  • 8-10 grape tomatoes, sliced
  • 2 eggs, fried
  • A generous spoonful of Mexican tzatziki
  • Fresh cilantro and cracked black pepper for garnish

What you’ll do:

  • Arrange the ingredients, minus the cilantro and black pepper, on top of the toasted tortilla
  • Finish with cilantro and cracked black pepper

    This looks delicious and is making me hungry. I do the same thing sometimes where I use as much as I can before going to the store. It’s a good rule of thumb!
